because it's January and that means that
it's the month for three kings pastry! My favorite is the flaky pastry with ground almond filling in the middle, and the ones Monsieur Le Hubby makes come out better than any other I've ever eaten. For reals. I'm not just saying that 'cause I love the guy. Objectively speaking, he makes a very tasty
frangipane. Go, hubby.
Per tradition he baked a couple of trinkets, called "f钁es" ("f钁e" is French for "bean" because way back when a bean used to be baked inside the galettes des rois to represent the prize), inside of the pastry. Whoever gets a f钁e is king or queen for the day and has to offer up the next kings cake. My son is currently the youngest one in the family (in France; overseas he has a cousin younger than him) so he's the one who hides under the table while the cake is being cut and he calls out who gets which piece. I didn't win a trinket this time but I have accumulated my share over the years. Here are just a few of my favorites:
